The idea that everything should be counterable doesn't quite gel with the game- it's not the design of it.
There is some magic in the game you just have to be very scared of.
Otherwise, we'd have to make Beholders chumps, dragons a good laugh, and liches a fun day out.
You can always run (or tactically retreat) It's a valid option.

Doom Knights are DM spawned only.
They are not in the CARES tables. -
@Echo we ran into two that spawned in deadwell, unless @SpiffyMeister spawned them behind us after he left... Which I don't think he did. They are also in the Redspring undead quest too.

Redwood quest is meant to be hard, the Doom Knight stays. :)

Not the quest, spiff, that’s fine. It’s in the open area of deadwell as a common spawn, in a 2 stack
