This was the 2nd time that happened, first time we had a DM spice so thought might have been the case. Having done it again yesterday, confirmed that the journal update for the optional part of the quest is broken

The journal entry is no longer blank but killing the boss does not give the update that we finish the quest to turn it in for a reward.

Just ran it again tonight, killing the boss NPC does not give the journal update to turn it in.

Ran the optional again last night. We had the bugged diary entry and didn't resolve on quitting without killing the boss.
