I've got at least a pair of mineral diamonds, emeralds, and rubies gathered from the Haunted Halls last night. Shouldn't be too hard to get three different helmlands mushrooms. The blood will be the challenge - I know you need to restrain the creature to do so and use a special tool. That might be one for the scouts or with the aid of a scroll, but I'm happy to assist.

Regarding the white stag and the ancient dire bear:
I've done some work to look into where one might find a white stag and an ancient dire bear. Both have been spotted within the Hullack forest before, and that location should prove the most likely to encounter them again. The ancient dire bear was noted as being seen near high crimmond.
I know that certain rituals require the extraction of blood with a specific ritual dagger. Do you anticipate this is the preferred method or did you have other plans in mind? I will note that the White Stag is not hostile and the one who provided the information requested the animal not be harmed.
I've been informed of a number of dangers within the Hullack and encourage treks into the forest are done with at the very least a small group as there are dangers out there that could prove most fatal.

White Stags are sent to this world to be hunted. It is their place in the cycle.
Anyone may hunt them, but do it with honor and mercy. Specially if you mean to use in a ritual to the wilderness.
